Preheat the oven to 180°C. Grease and line a 20x20cm square baking tin. Set aside.
In a large mixing bowl add all the wet ingredients – banana, butter/oil, eggs, vanilla, maple syrup and peanut butter. Use a stick blender to combine well or use a potato masher to mash banana and then combine with a spoon or whisk.
Add the remaining ingredients, then fold together until well combined and even.
Transfer batter to the lined tin, then bake for 30 minutes, or until cooked through.
