1¼ cups ripe banana, mashed
½ cup pistachio milk (or preferred milk)
¼ cup honey
¼ cup hulled tahini
¼ cup light, cold-pressed olive oil
½ cup coconut sugar (optional)
2 cups plain flour
1 tsp ground cinnamon
½ tsp fine salt
1½ tsp baking power
½ tsp baking soda
60g Lucky Diced Pistachio
¼ cup chocolate chips
1. Preheat oven to 180C. Grease and line a loaf tin and set aside.
2. Add the top 6 ingredients to a bowl and use a stick blender or fork to blend/mash well.
3. Sift in remaining ingredients, except the pistachios and choc chips. Mix until just combined, then fold through most of the pistachios. Pour into loaf tin. Top with remaining pistachios and choc chips.
4. Bake for 50-55 minutes or until cooked through when tested with a skewer.
