Whipped Ricotta, Honey and Pistachio Toast

INGREDIENTS

4 slices sourdough toast
Olive oil
1 cup ricotta
1 Tbsp honey
⅛ tsp salt
Good pinch of fresh pepper
Toasted pistachios, chopped
Dried rose petals

METHOD

  1. Drizzle each side of bread with olive oil. Rub into the bread. Heat a skillet over a medium flame, then add bread to the hot pan and toast each side for 3 mins or until golden brown.
  2. Meanwhile, add ricotta, honey, salt and pepper to a bowl. Whisk to combine until it looks fluffy.
  3. Once bread is toasted serve immediately. Top generously with the ricotta mix, an extra drizzle of honey, pistachios and rose petals.
